Sweet and Spicey Beef Bowl

This bold, beefy rice bowl is the perfect way to level up your weeknight meals. Marinated in a rich blend of soy, sesame, garlic and ginger, the beef is tender, flavour-packed, and finished with a glossy, umami-rich sauce that ties it all together. Served over fluffy rice with crisp cucumber, fresh chilli, toasted sesame seeds and a golden fried egg, this bowl brings the heat and balance in every bite.

Ingredients
- - 4 cloves chopped garlic
- - 3 tbs light soy sauce
- - 2 tbs dark soy sauce
- - 1 tbs chilli crisp oil
- - 2 tbs Maggi seasoning sauce
- - 2 tbs Shaoxing Wine
- - 2 tbs honey OR smoked honey.
- - MSG (optional)
- - pepper
- - skirt steaks (this marinade makes up enough for 1.5kg)
- - 1 sliced cucumber
- - 1 sliced red chilli
- - 2 tbs sesame seeds
- - 4-5 Spring / green onions
- - 4 eggs
- - White or brown rice
Method
- Start by marinating the beef. In a bowl, combine your marinade ingredients, soy sauce, sesame oil, garlic, ginger, and a splash of rice vinegar. Use about this much of each, and make sure the liquid fully covers the meat. Cover and refrigerate for 8–12 hours to let the flavours really soak in.
- Prepare your rice according to the packet instructions and set it aside, keeping it warm for serving.
- Once you're ready to cook, remove the beef from the marinade and set it aside. Pour the marinade into a pot and bring it to a gentle simmer over medium-high heat. Let it reduce and thicken slightly—just enough to intensify the flavour, but not too much, as it can get too salty. Add a little sugar if you'd like to balance it with some sweetness.
- Cook the beef to your preferred doneness. Medium to medium-rare is ideal for tenderness and flavour. While the beef is cooking, slice up your red chilli, spring onions, and cucumber for fresh crunch and colour.
- Now’s a good time to toast your sesame seeds in a dry pan over medium heat. Keep them moving until golden and fragrant, then set aside.
- Fry an egg in a hot pan just before serving—sunny-side up works beautifully for this bowl.
- To assemble, spoon your rice into bowls, top with sliced beef, fresh veg, toasted sesame seeds and the fried egg. Ladle over a generous amount of your reduced sauce and serve immediately.
