Ham Styles
Half Leg Ham
Classic bone in look and flavour. Fits most ovens and suits family gatherings.
Whole Leg Ham
Impressive centrepiece for larger groups. Generous yield with traditional presentation.
Boneless Ham
Compact and easy to slice with minimal waste. Suits smaller ovens and platters.
Size and Serves Guide
- 3 to 4 kg serves 8 to 10 with sides
- 4 to 6 kg serves 10 to 16
- 6 to 8 kg serves 16 to 22
How To Serve
- Cold: Slice and serve with mustards, chutney, and fresh salads.
- Warm: Cover with foil and heat at 160°C until just warmed through.
- Glazed: Score the fat, brush with glaze, and bake at 180°C, basting every 10 minutes until glossy.
Glazing Basics
- Remove skin, leave a thin fat layer, and score in a 2 cm diamond.
- Use roughly 3 parts sweet to 1 part acid with optional spice.
- Rest 10 to 15 minutes before carving.
Storage and Handling
- Refrigerate at 2 to 4°C on arrival.
- For bone in hams, use a clean ham bag or pillowcase rinsed in a solution of 1 cup vinegar to 4 cups water. Wring out and refresh every 2 to 3 days.
- Keep boneless hams tightly wrapped to prevent drying.
- Once opened and carved, consume within 5 to 7 days for best quality.
- Use clean utensils and limit time at room temperature.
Carving Tips
- Use a long, sharp carving knife and a steady board.
- For bone in, cut a small wedge at the hock end, then slice across the grain into even slices.
- For boneless, square one end and slice thin, even pieces.
