The wings smoke or roast at 180°C until golden and tender.

While the wings cook, whip up the fresh green sauce by blending parsley, tarragon, oregano, garlic, olive oil, lemon juice, and a slice of milk-soaked bread for a creamy finish. This sauce is a natural flavour powerhouse and pairs brilliantly not just with wings but also steak, lamb, and grilled veggies.

Ingredients

  • Chicken wings (whole or separated into drums and flats)
  • Your favourite BBQ rub (or simply salt and pepper)
  • Optional: wing tips reserved for chicken stock
  • For the Green Sauce:
  • 1 bunch fresh parsley
  • About 1 cup fresh tarragon
  • ½ cup fresh oregano
  • 4 cloves garlic
  • ¾ cup olive oil
  • Juice of 1–2 lemons
  • 1 slice white bread
  • A splash of milk
  • Salt and pepper to taste

Method

  1. Preheat your smoker or oven to 180°C. If using whole wings, you can separate them into drums and flats — saving the wing tips for making delicious stock later. Toss the wings lightly in your favourite rub or simply with salt and pepper, as the fresh green sauce will bring plenty of flavour. Smoke or roast the wings until they’re cooked through and beautifully golden.
  2. Make the Green Sauce:
  3. In a blender or food processor, combine fresh parsley, tarragon, oregano, garlic, olive oil, and lemon juice. Blend until smooth. Soak a slice of bread in a little milk, then squeeze out the excess and add it to the blender. Blend again to thicken the sauce. Season with salt, pepper, and extra lemon juice if you like. If the sauce feels too thick, add a splash of water to loosen it.
  4. To Serve:
  5. Drizzle the green sauce over the wings or serve it alongside as a dipping sauce or both, for extra flavour! This vibrant sauce also pairs beautifully with steak, lamb, grilled veggies, or just about any protein. Store leftovers in the fridge for up to a week.
