Season generously with salt just before a 2.5cm steak hits a screaming hot cast iron pan or grill. Give it a couple of minutes a side, pull it at 52°C and you'll land on medium-rare after a 5 to 8 minute rest on a warm board. Pair the set with a dry aged steak from our dry-aged case, or add a gift card so they can choose their own cut.
