For steak night, get cast iron screaming hot and give a 2.5cm rib fillet 2 to 3 minutes a side, salting just before it hits the pan. Pull it at 52°C for medium-rare, then rest it 5 to 8 minutes so the juices settle. Spoon the sauce over, or if you'd rather something creamy, try the Peppercorn Sauce.
