It's made for burgers. Sear your burger patties on a screaming hot cast iron plate, giving each side three to four minutes until they reach 65°C for medium or 71°C for well done. Leave the spatula alone, because pressing squeezes out the savoury beef juices. Rest the patty a minute or two on a toasted gluten free burger bun, then spoon the chipotle ranch sauce over. It's good for dipping wings too.
