Our chicken parmigiana is a ready-made family dinner built on chicken breast, and it's gluten free like everything we make. As Queensland's first Coeliac Australia accredited butcher, we keep the whole parmigana safe for coeliac households, so everyone can sit down to the same plate. Cannon Hill locals know it as the easy answer to a busy weeknight.

Cook it hot and fast so the chicken parmigana stays juicy. Bake at 180°C for 18 to 22 minutes, or pan-sear for 6 to 8 minutes a side, until the thickest part reaches 74°C.
