It suits fresh food rather than heavy char. The maker pairs it with oysters, scrambled eggs, a watermelon and feta salad or a bloody mary. Cooking a steak to go with it? Salt it generously as the pan or grill gets screaming hot, then sear 2 to 3 minutes a side. Pull at 52°C and rest on a warm board for 5 minutes. Spoon the sauce on at the table so it stays bright.
