Fancy Hanks Sauce Habanero and Carrot 200ml

Fancy Hanks habanero and carrot is the Hanks sauce to grab when you want real heat with some sweetness behind it. Fire roasted carrots (11%) bring the fruitiness, habanero puree (16%) brings big bold heat, and a clean acidic finish keeps it sharp. The maker rates it hot. It's made in Melbourne's Yarra Valley.

It's built for red meat. The maker's own staff meal is slow smoked brisket in a bun with the sauce added. Cook the brisket at 110°C to 125°C, roughly 1.5 to 2 hours per 500g, until a probe slides in at 93°C to 96°C like warm butter. Rest it wrapped in butcher paper for an hour before slicing. Go easy in a stew, or add a splash to a chicken marinade.
