Pat the meat dry, rub it in generously and pan-sear or grill over medium-high heat, about 4 to 5 minutes per side for thick cuts. Pull at 63°C to 65°C for a juicy medium, then rest 5 minutes. On a lamb chop or cutlet, stand it on its fat strip first and render that edge until crisp. Try it on a lamb roast, or see our rubs for other blends.
