Get a cast iron pan smoking hot and give a 2.5cm steak a few minutes on each side, seasoning with salt just before it hits the pan. Pull it at 52°C and rest it on a warm board for 5 minutes to reach medium-rare, then spoon the sauce over the top. It sits well beside a rib fillet, and there's plenty more to try in our sauces range.
