Crumbed Free Range Chicken Kievs

If you're after a butcher chicken kiev that's ready to cook, bake it or pan-fry it. The crumb crisps best in a hot cast-iron skillet or on a hot grill, about 3 to 4 minutes per side to start. Then finish in the oven until cooked through, with the juices running clear. Rest it for 3 to 5 minutes before cutting so the garlic butter stays put.
