Fancy Hanks jalapeno and peach is the middle child of the maker's hot sauces: sweet, tangy and a medium heat. It's 26% peaches and 26% jalapeno chilli puree, so you get fruity peach first, then the heat, then a clean, fresh vinegar finish that cuts through fatty chops.

The maker loves it with its smoked andouille sausage, and it suits fried chicken, pork cutlets or a Mexican inspired dinner too. Cooking sausages to go with it? Start them on the barbecue flat plate or in a skillet, keeping the heat gentle and medium, and turn them regularly. They'll take 10 to 12 minutes to reach 71°C at the core.
