For a roast, pat the skin dry first for a golden, crisp finish, then cook at 180°C for about 25 minutes per 500g plus 15 minutes. It's done when the deep thigh muscle reaches 74°C and the juices run clear. Rest it 10 minutes before carving. Want more forgiving meat?
