Free range chicken cutlets are an easy weeknight cut, with about 5 pieces to the kilo and an even thickness that cooks quickly. Everything at The Butcher Shoppe counter is gluten free, so they suit coeliac families too.

Cooking & Temperature Guide

Cook them hot and fast. Pan-sear for 6 to 8 minutes per side, or bake at 180°C for 18 to 22 minutes, until the thickest part reaches 74°C. Rest for 5 minutes before slicing so the moisture stays in the meat. Overcook them and they'll dry out, so use a probe if you have one. Want flavour done for you?
