Luv-A-Duck Duck Fat

Luv-A-Duck duck fat is rendered duck fat and nothing else, with no added salt, from the family-owned Australian farmers at Luv-A-Duck in Nhill and Ballarat, Victoria. It's what gives roast potatoes a glass-crisp shell and a fluffy middle.

Luv-A-Duck's own method is simple: parboil 500g of potatoes, then roast them with 1 tablespoon of duck fat. The high smoke point handles a hot oven without scorching, and it's the traditional fat for French style confit duck. Put the potatoes under a Sunday roast or an easy carve lamb leg roast. As Luv-A-Duck says, it's gluten free.
