It suits sausages straight off the barbecue and a rested steak. For sausages, cook them on a flat plate or in a skillet over gentle medium heat for 10 to 12 minutes, turning regularly, until they reach 71°C in the centre. Never prick natural casings with a fork, so the juices stay inside. Rest for 2 minutes, then add the sauce. Our sausages are hand linked in natural casings, and you'll find the rest of the house made rubs and sauces in the same collection.
