Cooking one at home? Use a screaming hot cast iron plate and give the chicken 3 to 4 minutes a side, until it's cooked through at 71°C. Don't press it with the spatula, that only squeezes out the juices. Rest it 1 to 2 minutes on a toasted bun. Prefer beef? Try the cheese burger, and add hot chips on the side.
